Starting June 5, Bamboo Sushi—North America’s first certified sustainable sushi restaurant—will feature a new limited-time dish, ASC Yellowtail Crudo, at all ten of its locations across Washington, Oregon, California, and Colorado. This dish showcases ASC-certified yellowtail (hiramasa) from The Kingfish Company, garnished with fresh seasonal ingredients like pickled strawberries, tomato juice, Fresno chili, olive oil, basil, and sea salt. It proudly carries the ASC Sea Green Label, underscoring its commitment to sustainable aquaculture.
The Certified Seafood Experience
Throughout June, the Certified Seafood Experience invites sushi lovers to “Experience Green Oceans, Experience Green Life.” This nationwide initiative, supported by ASC, Bamboo Sushi, and Pacific Seafood, aims to educate consumers about ASC’s rigorous certification standards and the positive impact of responsibly farmed seafood on ocean health and global food systems. Educational efforts include in-store activities, digital content, and storytelling.
Focus on Seattle & Media Preview Event
Seattle, known for its deep connection to the ocean and seafood culture, hosted a media preview tasting on May 20 at Bamboo Sushi’s University Village location. More than 30 media, influencers, and industry experts enjoyed a curated menu highlighting ASC Certified Yellowtail. The event featured dishes like Yellowtail Tiradito, Bamboo’s Green Machine Roll, and Grilled Yellowtail with Guajillo romesco, introducing the soon-to-be-launched ASC Yellowtail Sashimi.
Speakers included Athena Davis, ASC’s North American Marketing Manager, Lauren Enz of The Kingfish Company, Kady Freeze from Pacific Seafood, and Elijah Lehrer, Bamboo Sushi’s VP of Operations. They discussed the journey of certified fish from farm to table, emphasizing transparency, certification, and quality throughout the supply chain.

Looking Ahead
This campaign builds on the success of the 2023 Earth Month promotion between ASC and Bamboo Sushi. They plan to collaborate again in October 2025 for National Seafood Month, debuting ASC-certified Blue Ocean Mariculture’s Hawaiian Kanpachi at a media preview in Denver.
