On Wednesday, May 9, the pizza chain announced plans to launch Pizza Caviar, calling it a “first-of-its-kind innovation” designed to elevate “the world’s favorite comfort food.”
But the innovative topping isn’t what you’d think: caviar.
Pizza Hut is about to launch a product that aims to “replicate the look and taste of traditional caviar,” but without any fish ingredients. The treat comes in a jar filled with little balls of Pizza Caviar that have a “smoky sausage flavor,” according to the brand. The balls are made from sausage-flavored water and agar, a plant-based, gelatin-like thickener made from red algae.
While putting real caviar on pizza might be the more obvious choice, the brand posed the question in a press release: “Why only put caviar on pizza when you could completely reimagine and create a bold new food category?”

Pizza Hut explains that the new product is inspired by the increasingly popular “caviar nuggets,” where diners can bite off a small bite of caviar directly from the back of their hands. So, Pizza Hut’s caviar balls can not only be drizzled on chips or pizza, but can also be “dipped, dipped, and mixed with.”
“As a brand that is always pushing the boundaries of pizza culture, we saw an opportunity to incorporate one of today’s most popular food trends into our own product,” said Melissa Fribe, Pizza Hut’s chief marketing officer, in a statement provided to Food & Wine. “Pizza Caviar is our way of bringing a touch of luxury while maintaining the Pizza Hut flavor that people love.”
If you want to try Pizza Caviar for yourself, you do need to be in New York City – or may need to make a last-minute trip – as it’s only available at Pizza Hut at 932 Eighth Avenue in New York City.
To get a taste of the shop’s pepperoni-flavored treat, all you need to do is order the new Pizza Caviar Bump Box, which includes a cheese personal pizza and three boneless wings or fries, each topped with a Pizza Caviar ball.
