Improve Your Brain Health with the MIND Diet

Dr. Sandra Darling, a preventive medicine specialist at Cleveland Clinic Hospitals, has teamed up with Chef Loretta Paganini to promote the idea of using food as medicine to enhance memory and slow cognitive decline. The pair is offering a class titled MIND Diet for Brain Health on Monday, March 31st at 6 p.m. at the Loretta Paganini School of Cooking in Chesterland. The event will also feature Fox 8’s Stefani Schaefer, who is set to learn more about the benefits of the MIND Diet.

Chef Paganini will also share a delicious recipe from the MIND Diet to support brain health.

MIND Diet Recipe: Swiss Chard & Kale Mediterranean Style

Ingredients:

  • 2 pounds Fresh Swiss chard, washed and spun dry
  • 1 pound Fresh Baby Kale, washed and spun dry
  • 4 tablespoons extra-virgin olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 roasted red pepper, peeled and diced
  • 1 lemon (juice & zest)
  • 1 teaspoon fresh ginger
  • 1 tablespoon pine nuts, toasted
  • 1 teaspoon fresh flat-leaf parsley, finely chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

Rinse the Swiss chard and kale thoroughly in cold water to remove any dirt. Roughly chop the Swiss chard and kale, discarding the tough stems.

Heat the olive oil in a 14-inch frying pan. Add the chopped onion and minced garlic, sautéing for 5 minutes until fragrant.

Add the chopped Swiss chard and kale to the frying pan. Cook for about 10 minutes, or until the greens are tender but not browned.

Season the greens with salt and pepper, then toss them with the lemon juice, lemon zest, fresh ginger, and roasted red pepper. Cover the pan and cook for an additional 5 minutes.

Uncover the pan, turn the heat up to high, and cook for another minute, stirring with a wooden spoon until everything is wilted and tender.

Remove the pan from the heat, then add the pine nuts and chopped parsley. Let it cool slightly before serving. Adjust seasoning with salt and pepper to taste.

This flavorful and nutritious recipe is a perfect addition to a MIND Diet plan aimed at improving brain health.
